DESCRIPTION

A perfectly made fruit tart: a crispy and thin shortcrust pastry, a rich and enveloping pastry cream with two types of vanilla (Madagascar and Tahiti), and a generous cascade of berries.

Ingredients
  • Shortcrust pastry: type 00 WHEAT flour, BUTTER (82% fat), granulated sugar, powdered sugar, ALMONDS, pasteurized EGGS, lemon, salt, Madagascar vanilla.
  • Pastry cream (30%): whole MILK, pasteurized EGG yolks, granulated sugar, CREAM (35% fat), rice starch, pectin x58, salt, Madagascar vanilla, Tahiti vanilla.
  • Mixed berries (30%): strawberries, raspberries, blueberries, blackberries.
  • Neutral gelatin: Abrigel neutral gelatin (sugar syrup: glucose-fructose syrup, cane sugar and water, apricots, gelling agent: pectin, acidifier: citric acid), water.
