"Gianduia" is a type of chocolate paste that originated in Turin in 1806, created by ingenious Turin chocolatiers who, during the Napoleonic blockade, replaced the now very expensive cocoa with the round, tender hazelnut of the Langhe region.
Enrico Rizzi's Sinfonies are sometimes inspired by "classic" combinations, such as the pairing of almond and candied citrus fruits, but always add a personal touch. In other cases, however, they combine seemingly distant and unusual, if not unique, ingredients, as in the case of caramel, cocoa beans, and Maldon sea salt.
