Ernst Knam, born in 1963, of German origin but adopted as a Milanese, after spending many years in the kitchens of the greatest and most prestigious Michelin-starred restaurants in the world, arrived in Italy and joined Gualtiero Marchesi's kitchen as Master Pastry Chef, the final step in his training before embarking on his entrepreneurial activity.

In 1992, he opened his now-historic pastry shop at 10 Via Anfossi in Milan, a world where creativity is the order of the day. Knam's pastry shop is characterized by its refined taste and unusual combinations. His creations follow the seasonality of the ingredients, and his interpretations of chocolate, spices, and fruit make his art unmistakable.
