DESCRIPTION

A light mousse with 2 vanillas (Madagascar and Tahiti), a juniper cream, a Yuzu/black cherry/Japanese Gin jelly, a soft pain de gênes with Amalfi lemon and a Breton vanilla sablée at the base.

  • Juniper cream: whole MILK, CREAM (35% fat), granulated sugar, pasteurized EGG yolks, white chocolate (sugar, cocoa butter, whole MILK powder, emulsifier: sunflower lecithin, natural vanilla extract), water, edible gelatine (100% pure edible granular gelatine, GLUTEN-free), juniper berries (1.5%)
  • Cherry, yuzu, gin jelly: *thawed cherry puree (100% fruit) (42.25%), *thawed yuzu puree (21%), Etsu gin (20%)), granulated sugar, water, edible gelatin (100% pure edible granular gelatin, GLUTEN-free), lime
